“LIFE AFTER RAW.….MY OWN EXPERIENCE”
My 2008 year resolution was to “EAT RAW” I had the intention to improve my eating style for the past five years. Along those years I met people that were devoted to a conscious eating style. I wanted to follow the trend since I was looking for improving and preserving my health too. I tried a good percentage of the organic products that are offered in the market; fresh, bottled, canned, and packed. I ended up loading up my refrigerator with expensive products and vitamins that were supposed to assured me a high quality of life. Most of the time where recommended by different people following different directions and that in many cases where as lost as I was. But it was Ok, since we all were looking for the youth fountain. The last week in 2007 when I was fighting a medical condition that put my life in a serious risk, I met a very special person to me, that shared with me that he was an “Organic Vegan Raw Foodist”. Since the first time we talk, I felt he was the lost piece of the chain I was trying to piece up all over these years. His conviction was my inspiration, and my threatening medical condition, the catalyze to make me adopt this eating style from one day to another. My friend’s support and his kindly guidance through these transitional time in my life made me modestly knowledgeable of the essential principles in cooking raw food and that made me beat a chronic disease in less than three months. I really felt my health back to normal in two months an a half but I took my medical test in three months, which showed that everything had being amazingly fixed and controlled in my body. I was not vegan during that time, but I just ate which is considered the strictly necessary portion of mostly white meat and fish and few cooked and raw food. I feel really grateful to God for sending me the right person at the very right time! Since the first days in the year, I was cooking all my meals at home, discovering flavors, how to contrast textures, reading books about Enzymes and their benefits in our body, walking at least half an hour a day, discovering ways to get desired flavors, taking some courses of raw cuisine and inventing recipes every time, and always sharing and enjoying them with my friend, who was a serious judge every time he tried something new and really helped me to improve my abilities in this new gourmet concept.
All this experience and my love for teaching ( www.spanishdalila.com) and sharing knowledge is inspiring me to be an inspiration for others.
Now, I want to share with you, all what I have learned so far and continue learning from this eating style, through a practical hands-on workshop since I truly believe that if you are not involved in a demonstrative and lively experienced class, you will never get your senses really in touch with the natural palette of flavors that raw food has to offer to you.
